Minted Chickpea Salad with Creamy Curry Dressing

Ingredients

Salad Base

  • 1 cup quinoa drained and rinsed
  • 1 15-ounce can chickpeas drained and rinsed
  • 1/2 cup cashews chopped and toasted
  • 1/2 cup raisins
  • 1/4 cup mint thinly sliced

Curry Dressing

  • 1/2 cup non-dairy yogurt plain, unsweetened
  • 2 tablespoons lime juice fresh
  • 2 teaspoons raw honey
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon curry powder

Instructions

  1. Cook quinoa according to package directions (or instructions below in notes!). Set aside to cool.

  2. Toss salad ingredients together in a medium bowl.

  3. Whisk dressing ingredients together and pour over quinoa mix. Toss to combine.
